Everything you need to know about Fradiavolo doughs, ingredients, and dietary options.
Yes, all 5 Fradiavolo doughs are available for any pizza on the menu. The Classico and Sottile doughs are included in the base price. The Nero (vegetable charcoal, +€1.50) and Integrale (low-carb, +€1.50) doughs have a surcharge. The Senza Frumento dough has a +€2.50 surcharge. Allergen info by dough: Classico and Sottile contain gluten (soft wheat); Nero contains gluten; Integrale contains gluten, soy (lecithin) and traces of sesame; Senza Frumento is made with gluten-free flours but is not suitable for celiacs due to cross-contamination risk.
The Classico dough is made with soft wheat flour from Molino Bongiovanni: high crust, soft and very tender. The Integrale is a low-carb dough made with a multigrain flour blend (whole wheat, spelt, rye, flaxseed, oat and wheat bran): it is more rustic and fragrant. Note: Integrale contains soy (soy lecithin) and traces of sesame, in addition to gluten.
No, the Nero dough does not alter the flavor of the pizza: the taste is practically identical to the Classico dough, with the same high crust and softness. The black color comes from powdered vegetable charcoal, which enhances the digestive properties of the dough.
The Senza Frumento dough is made with naturally gluten-free flours, but it is not suitable for celiacs. Our kitchens also process doughs containing gluten, so there is a real risk of cross-contamination. If you are celiac, we recommend informing the staff before ordering.
The vegan pizza available at all Fradiavolo locations is the Marinara (La Concettina Tomato, Garlic, Oregano, Basil). Some vegetarian pizzas can be made vegan by substituting mozzarella with Dreamfarm plant-based mozzarella (almond-based, made in Italy): ask the staff to verify availability at your pizzeria.
Several Fradiavolo pizzas are vegetarian, including: Margherita, Margherita più, Margherita doppia mozzarella, Bufala, Marinara, Ortolana, Fata Zucchina, Porcino e contento, Stranger chips. The Cacio e pepe pasta dish is also vegetarian. The menu is updated periodically: always check the available options at your pizzeria.
The main menu is substantially uniform across the chain, but some pizzas, pasta dishes and the Sottile dough may not be available at all locations. We recommend consulting the menu directly at your chosen pizzeria before ordering.
